Gluten Free Calzone

Looking for a way to make gluten free lunches a little more exciting? This pizza-inspired recipe is sure to please the whole family and is perfect to pop in the kids lunchbox to fill them up.

  • 500g Gluten Free Bread Mix
  • 60ml Canola Oil
  • 3 tsp. Gluten Free Dry Active Yeast
  • 450ml luke warm water
  • 400g of salt-reduced, low-fat, gluten-free ham
  • Finely grated parmesan cheese
  • 2-3 Tomatoes

  1. Follow the instructions for making the Bread Mix in the oven. Allow the mixture to rise for 40 minutes in a loose sealed bag.
  2. Using the edges of a small square baking tin lined with a large piece of baking paper, spoon1/8 of the bread mixture into the centre of the tin. Fold the baking paper over the mixture and use it to spread the mixture into the shape of the tin (without it sticking).
  3. Add 2 slices of tomato along the middle of the bread dough and sprinkle with 1 tsp. of grated parmesan.Top with50g of ham.
  4. Pick up the edges of the baking paper to fold the bread dough over the filling ingredients, sealing the edges in the middle and at both ends. Transfer onto a tray lined with baking paper.
  5. Pre-heat the oven to 180C. Repeat steps 2 - 4 until you have8 Calzones.
  6. Bake for 20 minutes or until the bread is cooked through.

Serving Suggestions

Enjoy a green salad on the side or simply wrap and pop in the lunchbox for the kids to enjoy. It also great cut into smaller bite sized pieces for kids parties as an alternative to sausage rolls
