Oat and Banana Cookies

This healthy cookie recipe is quick and easy to prepare and is also a great way to involve the kids in the kitchen. Ask them to mash the bananas in a bowl and add the measured ingredients. They can even use their hands to shape the cookies!

  • 1 cup rolled oats 
  • 3 medium over-ripe bananas 
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 3 Tbsp Ground LSA

Method

  1. Preheat oven to 160°C and line a baking tray with baking paper.
  2. Mash the bananas and mix through the cinnamon and vanilla extract.
  3. Measure the oats and ground LSA, and add to the mashed bananas.
  4. Mix the ingredients thoroughly using a fork.
  5. Roll heaped tablespoonfuls of the mix into balls and flatten onto the baking tray.
  6. Bake for 20 minutes or until the edges are done, but the centres are soft. Transfer to a cooling rack.

Serving Suggestions

Serve for afternoon tea or pop into the lunchbox for a tasty snack.
