LSA Chewy Muesli Slice

For snack option bursting with fruity flavours and the goodness of Omega 3 fatty acids look no further - this recipe was a winner of our LSA baking competition - from the consumer for the consumer.

  • 125 g Butter or Margarine
  • 1 Cup White Sugar
  • 2 Tbsp Golden Syrup
  • 1 Cup Flour
  • 1 tsp baking powder
  • 1/2 Cup LSA Super Fruits
  • 1 Cup Coconut
  • 1 Egg
  • 1 Cup mixed dried fruit and nuts
  • 5 Weetbix or equivalent dry whole-wheat breakfast cereal, crushed

Method

  1. Preheat oven to 180°C.
  2. Spray a sponge roll type tin approx. 20 x 30 cm with non stick baking spray
  3. Over medium heat, melt margarine, sugar and golden syrup in a large saucepan.
  4. Remove from heat and add all the other ingredients and mix thoroughly.
  5. Press into the prepared tin.
  6. Bake for 20 minutes or until firm.
  7. Cut into bars while still warm but leave in the tin until completely cold before removing.
  8. Store in an airtight container.

Serving Suggestions

Serve as a morning or afternoon snack or pop into the lunchbox in place of a bought muesli bar
