Jacqueline’s Chicken Soup
A good winter warmer which can also be enjoyed as a main meal.
Ingredients
- 2 carrots diced
- 2 potatoes diced
- 1 cup bali or rice/spaghetti pieces
- 1 litre chicken stock
- 4 chicken thighs (drumsticks)
- salt and pepper
- Optional Ingredients
- 2 celery sticks diced
- 2 zucchini diced
Method
- Boil chicken thighs (drumsticks). When cool shred into smaller pieces
- Boil bali
- Place chicken stock into a pot, add diced carrots and potatoes (and celery /zucchini if desired)
- Add pre cooked bali or uncooked rice/spaghetti pieces
- Boil for 30 min, add salt and pepper to taste
