Jacqueline’s Chicken Soup

A good winter warmer which can also be enjoyed as a main meal.

Ingredients

  • 2 carrots diced
  • 2 potatoes diced
  • 1 cup bali or rice/spaghetti pieces
  • 1 litre chicken stock
  • 4 chicken thighs (drumsticks)
  • salt and pepper
  • Optional Ingredients
  • 2 celery sticks diced
  • 2 zucchini diced

Method

  • Boil chicken thighs (drumsticks). When cool shred into smaller pieces
  • Boil bali
  • Place chicken stock into a pot, add diced carrots and potatoes (and celery /zucchini if desired)
  • Add pre cooked bali or uncooked rice/spaghetti pieces
  • Boil for 30 min, add salt and pepper to taste
