Carrot and Orange Soup

A healthy and delicious winter warmer!

Ingredients

  • 2 tbsp oil
  • 1 medium onion, peeled and chopped finely
  • 900g carrots
  • 1 litre light low sodium vegetable stock

Seasoning

  • ½ tsp nutmeg
  • ½ tsp paprika
  • 1 – 2 tbsp fresh coriander, finely chopped or 2 tsps grated fresh ginger

Final additions

  • Rind and juice of 1 large orange
  • Pepper Seasoning
  • ½ cup cream

Method

  • Heat the oil in a pan, add the onions, then cover the pan and simmer for 2 - 3 minutes.
  • Peel and chop the carrots finely and add these to the pan. Cover again and simmer the vegetables for a further 10 minutes.
  • Next add the stock, spices and coriander or fresh ginger and the rind and juice of an orange. Bring to the boil and simmer for 40 minutes.
  • Let the soup cool, then thoroughly liquidize in a blender or food processor making sure it is completely smooth. Season it well with Abundant Earth 3 Pepper Seasoning, then return the soup to a clean pan and re-heat it gently with added cream stirred gently in.
  • You can serve this soup garnished with extra coriander or thin slices of orange. This soup makes a good first course or lunch with salad and roll.
