Carrot and Orange Soup
A healthy and delicious winter warmer!
Ingredients
- 2 tbsp oil
- 1 medium onion, peeled and chopped finely
- 900g carrots
- 1 litre light low sodium vegetable stock
Seasoning
- ½ tsp nutmeg
- ½ tsp paprika
- 1 – 2 tbsp fresh coriander, finely chopped or 2 tsps grated fresh ginger
Final additions
- Rind and juice of 1 large orange
- Pepper Seasoning
- ½ cup cream
Method
- Heat the oil in a pan, add the onions, then cover the pan and simmer for 2 - 3 minutes.
- Peel and chop the carrots finely and add these to the pan. Cover again and simmer the vegetables for a further 10 minutes.
- Next add the stock, spices and coriander or fresh ginger and the rind and juice of an orange. Bring to the boil and simmer for 40 minutes.
- Let the soup cool, then thoroughly liquidize in a blender or food processor making sure it is completely smooth. Season it well with Abundant Earth 3 Pepper Seasoning, then return the soup to a clean pan and re-heat it gently with added cream stirred gently in.
- You can serve this soup garnished with extra coriander or thin slices of orange. This soup makes a good first course or lunch with salad and roll.
