Strawberry Muffins

The beauty of muffins is that you can make any flavour that takes your fancy. Just substitute your fruit and yoghurt of choice for a new treat every time you bake. Variety is the spice of life, after all.

Ingredients

  • 200g rolled oats
  • 100g of plain or low fat yoghurt
  • 1 egg
  • 250g strawberries
  • 1 tablespoon of sugar
  • Optional 2 tablespoons of protein powder

Method

  • Pre heat oven to 200C.
  • Chop strawberries roughly and microwave for 1 minute in a bowl with 2 tablespoons of water.  Mash roughly with a fork when done.
  • Combine oats, yoghurt, egg, (protein powder), sugar and strawberries, mix well.
  • Spoon into muffin pan lined with muffin cases. Bake for 25-30 minutes or until firm and slightly browned on top. Allow to cool in pan and store in fridge.
