Bircher Pancakes

Ingredients
- 2 cups milk
- 3 eggs
- 1/4 cup caster sugar
- 1 cup plain flour
- 1 cup Muesli
- 60g butter or margarine
- 250g fresh berries (e.g. strawberries, blueberries and raspberries), to serve
- 1/2 cup maple syrup, to serve
Method
- In a bowl, whisk together the milk, eggs and sugar.
- Add the flour and whisk until no lumps remain.
- Stir in the muesli, mixing well to combine.
- Heat a small frying pan over medium heat.
- Add a little butter or margarine.
- Spoon 2 tablespoons of the mixture into the pan. Once small bubbles appear on the surface, flip over and cook until golden on both sides. Keep the pancakes warm while using up the remaining batter. Makes sufficient for 5-6 serves with the berries and maple syrup.
Serves
30 pancakes.
