Zucchini Croquettes
Who said eating your veggies was boring? These tasty treats make a delicious accompaniment to fish, chicken or meat, or as a light, nutritious lunch.
Ingredients
- 3 medium zucchini, grated
- 2 tsp salt
- 2 cloves garlic, crushed
- 3 eggs, lightly beaten
- 1 cup low fat feta, crumbled
- 1 tsp oregano (fresh or dried)
- 1 tbsp fresh chopped parsley
- 1 medium onion, very finely diced
- Canola oil for cooking
- Optional: 2 tbsp Aussie Bodies Perfect Soy Protein
Method
- Mix the grated zucchini with the salt in a bowl, and let it sit and sweat out excess liquid. After an hour, squeeze out well, and drain liquid.
- Add the remaining ingredients, and mix well, adding pepper to taste.
- Spray a non-stick frypan with canola spray, and cook the batter by the tablespoonful, allowing them to become quite brown on the bottom before flipping (this will stop them from falling apart). When firm and well browned on both sides, keep warm in a low oven,and repeat process until all the mixture is cooked.
