Vegetable Loaf

This loaf is loaded with heaps of delicious veggies, making it a vegetarian delight.

Ingredients

  • 1¾ cups coarsely grated carrots
  • ¼ cup finely chopped parsley
  • ½ cup coarsely grated zucchini 
  • 1 small red pepper (100g)
  • 2 small sticks of celery
  • ¼ small spanish onion, finely chopped
  • 2 eggs, lightly beaten
  • 4 eggs whites, lightly beaten
  • ¼ cup creamed cottage cheese
  • 2 tablespoons low-fat mozzarella cheese
  • 3 tablespoons stale rye breadcrumbs or oat bran
  • 1 teaspoon mild curry powder
  • ½ teaspoon sweet chilli sauce

Method

  • Pre heat oven to 180C.
  • Line an 11cm X 18cm pan with foil.
  • Combine all ingredients in a bowl and mix well.
  • Bake for 50 minutes. Stand for 10 minutes before removing from pan, remove foil carefully.
  • Serve with a crispy winter green salad and a dollop of fresh tomato salsa or tzatziki yoghurt dip.

Serves

Makes 6 chunky slices.
