Spaghetti with Prawns
Try this seafood option with spaghetti and a little bit of spice to liven up dinner!
Ingredients
- 2 x 250g packets Spaghetti
- 1 teaspoon each: olive oil, chilli paste
- 2 cloves garlic, crushed
- 600g cooked prawns
- 150g each: char grilled red and yellow capsicums, semi-dried tomatoes, chopped
- 1/2 cup each: chopped basil, mint and flat-leaf parsley
- 1/2 cup grated parmesan (optional)
- sea salt and pepper to taste
Method
- Cook the spaghetti until tender.
- Meanwhile, heat the oil in a non-stick frying pan. Add the chilli paste and
garlic and sauté over a moderate heat for 30 seconds. Add the prawns and
toss until heated through. - Drain the spaghetti and place it in a large bowl. Add the prawns,
capsicums, tomatoes, herbs and parmesan and toss until combined. - Season with salt and pepper.
